Maggie's Aji de Gallina
(Peruvian Spicy Chicken)
Boil chicken breast with plenty of water (this will be your broth), garlic and salt. Once cooked thoroughly, shred chicken.
Pour sauce over shredded chicken and serve with a side of rice, garnish with sliced boiled egg.

When I lived in Peru, this meal was a staple. It's very rich in flavor and a bit spicy. I promise once you make it, you will repeat it. (This is not our photo but you can see what it looks like :)
Ingredients:
1 can evaporated milk
3 chicken breast (boiled with plenty of broth)
1/4 onion
2 packets of saltine crackers
1 garlic clove
Aji Amarillo paste - Peruvian
White rice cooked
1 hard boiled egg (optional)
Boil chicken breast with plenty of water (this will be your broth), garlic and salt. Once cooked thoroughly, shred chicken.
In blender add evaporated milk can, saltine crackers, some of the broth and 1/4 Aji add more gradually as desire spice the end results is a creamy milky sauce.
Pour sauce over shredded chicken and serve with a side of rice, garnish with sliced boiled egg.
