Salsa Roja
This salsa is my favorite red salsa, we make it in our house with every meal. It's so good and it's so simple that we can make it really fast.
Ingredients:
Dried Arbol Peppers/ Chile de Arbol* (handful)
1/8 Onion
1 Clove Garlic
Salt
3 Tomatillos*
Instructions:
Peel and clean tomatillos, add to pan and fill with enough water to cover completely. Boil in medium heat, until tomatillos are soft and change color.
While tomatillos are boiling. Heat a non-stick skillet or a "comal" if you have one. Remove the stems from the arbol peppers, you can use gloves for this if you wear contacts because you will feel it later if you don't. Once the skillet is hot, add the arbol peppers until slightly toasted, DO NOT let them burn/turn black. Remove when ready and add to blender.
In blender combine arbol peppers, onion, garlic, salt. Fill with enough water to cover up to the blades and blend until seeds are blended completely, for a few minutes. Then add tomatillos, blend thoroughly and voila its ready!
*If you want the salsa really spicy add more peppers (roasted) before adding the tomatillos in the blender, and if you need to bring it down a notch add more tomatillos (boiled) in the blender.
