Enchiladas Verdes de Nieves


These are MY favorite!! I love making these anytime! So I decided to take pictures, about time! This recipe uses Tomatillos, you can find them in any Mexican store and of course Wal-Mart. In my area Food lion always has a good selection, Lowe's and Harris Teeter usually don't.
 
Ingredients
1lb Tomatillos
5 Serrano peppers
1 garlic clove
1/8 of an onion
3 chicken bouillon

          Peel and rinse the tomatillos, they are a little sticky feeling, so you have to wash all that off. Then get the Serrano peppers and cut the stem off, rinse as well. In a sauce pan put tomatillos and jalapenos in and fill with enough water to cover and bring to a boil over medium-high heat. While they are boiling you can start to shred the chicken, the smaller the better. Once you have it ready set aside. I like to stick in in the microwave so it stays warm. 
By now the Tomatillos are probably ready, they should be soft, a little transparent, and they lose their green color. With a slotted spoon put soft tomatillos in blender with Serrano peppers, you can leave one or two peppers out so you can add them in after you taste it, in case you want more spice in your sauce.
          In a blender combine Tomatillos, Jalapenos, Onion, Garlic, and Chicken Bouillons (optional). No need to add water because the tomatillos have plenty of water in them now. Blend on high speed for a couple minutes, making sure everything blends completely. Should look somewhat like this:



 In pan heat around 2tbls of oil, enough to coat the pan. Once oil is hot add sauce directly from blender to pan, be very careful because it can splatter and it's very hot. I use a splash screen for this part. 
While sauce cooks start to heat tortillas in a comal (skillet) to soften the tortillas. Let the sauce cook for a few minutes until you see it boiling some, this means sauce is ready!
 
Making the enchiladas: Drop one tortilla in sauce with a large spatula only for a couple seconds. When you take it out put it on a plate and add chicken and mozzarella cheese or crumbled Mexican cheese with minced onions. Then roll tortilla with stuffing and set to the side. Continue doing this until u have as many per plate as you want. 
   Top with a little more sauce, shredded lettuce, crumbled Mexican cheese, onions (optional), avocados and sour cream!
Serve with a side of rice and ENJOY!!!
